About Us

If you enjoy craft beer in the form of an aggressively hopped IPA, a fruited kettle sour, and/or an occasional overloaded coffee stout, you came to the right place.

Here’s how it started

It all started with a passion for brewing that burns deep inside. Brewer and owner E.J. Lastauskas had a vision that started as a simple “what if.” He finally shared this vision out loud to his family, the idea of building a brewery based on pure passion, both for life and for beer. This brewery would ideally have minimal marketing, a word-of-mouth reputation, relaxed and basic atmosphere, a “mostly” positive theme with beer names that most people on earth can relate to, and most importantly, high quality beer. E.J. now boasts 7+ years experience as a brewer and his relentless determination to build a brand that symbolizes a quality product at Last Minute Brewing.

Our name came about for a few different reasons:

- Lastauskas Brewing was just too much of a mouthful.
- E.J. is notorious for living his life on the fly.
- The name itself was, well…last minute.

Our mission at LMB is to brew the best beer we possibly can, using the highest quality ingredients, and using local ingredients as much as possible, while pushing the boundaries of each style beer we brew, for the local beer fanatics.
